Spread the onion pieces over parchment-lined baking sheets, making sure the pieces don’t overlap too much, and then place in the oven at its lowest temperature. It’s best if it’s between 130-150ºF (54-66ºC). For oven drying, break garlic bulbs into cloves, peel, slice thinly. Spread the pieces out on an ungreased cookie sheet. Place in 150 F (65 C) oven, turn frequently. The pieces will look decidedly dry when the liquid has cooked out, and will darken a bit. Remove them from oven, cool, and store in an air-tight container for up to a year. Storing the container in a freezer will prolong the storage life. Equivalents How To Rehydrate Onion Flakes– add the onions to some boiling water (around 1 cup flakes to 1 cup water). Allow them to soak for 20-30 minutes. Any leftover water can be used in soups, stews, and sauces.

Add a few garlic flakes to your next homemade salad dressing for a bit of added flavour. I throw a few flakes into the oil/vinegar mixture to allow the garlic to infuse the dressing. A bit about dehydrators… If you’re using homegrown onions, it’s worth noting that the green leaves can be dried too. Though the time to dry between the onion and the leaves can vary. Recently I posted my simple DIY for homemade everything bagel seasoning, which contains dried garlic and onion flakes/granules. With that in mind, now is the perfect time to share my homemade guide to making dried onion flakes.

The most important thing to know about cooking with garlic is that the more you cut or mash the garlic, the stronger the flavor will be. This is because garlic contains flavor and aroma compounds (allicin) that are activated when cut. Therefore, adding whole garlic cloves to any dish will add a very subtle flavor. At the same time, garlic puree will have a very robust flavor and aroma. The use of garlic as a food has ancient origins in Asia. Garlic has been used for centuries as a wholefood, and as a flavouring agent. [19] Garlic can be manipulated in multiple ways to create bio-products, such as powder, oil and salt, to enhance foods in both nutrients and flavour.

You can do this at home, with a dehydrator or oven. The cost of electricity needed, though, may or may not make it worthwhile. In a dehydrator, you can dry them in large pieces, which you then put in a tea towel, and crush with a hammer. Place the onion slices on a large kitchen towel/cloth or paper-lined baking tray and leave them in a well-ventilated area ( air circulation is needed!), near a window (if possible).

For dried minced garlic you can use a food processor/chopper for just a few seconds to roughly chop the garlic or mince the garlic by hand with a sharp knife. Step 2: Dehydrate it Using a dehydrator
