The absorption and/or permeation of aroma compounds through polymers is based on the general equation that permeation (P) is a product of diffusion (D) and solubility (S), P = D×S. Consequently, only those aroma compounds with high diffusion and solubility coefficients in respective polymers are likely to be lost through permeation or absorption during storage. The solubility of a compound in a polymer can be estimated simply by making use of the fact that “like dissolves like”. The best way to thaw out your frozen orange juice is in the fridge. You just need to take it out of the freezer and pop the container into the fridge and allow it to defrost for several hours. It is best to defrost overnight so make sure you plan ahead! If your orange juice has pulp then it is worth straining it before freezing to avoid the grainy texture when you thaw it out.
