After attempting 10-15 different recipes from the “Ultimate Cookery Course” series (and enthusiastically sharing my progress with close family and friends), I decided to share my progress online as well. Maybe a few folks out there will enjoy looking over this content. Even if nobody reads this content, fine. I am doing this for me, and me alone. I believe I have a high chance of completing all 100 recipes. In the same skillet, sauté the onion, mushrooms, and garlic until the vegetables are soft and the liquid has evaporated, about 5-7 minutes. Chicken & Autumn Vegetable Pies

I was wrong on both counts! The recipes in this cookbook, from beginning to end, are just like the ones in the fancier cookbooks of Ramsay's: super intense, complicated recipes for foods I'd never get anywhere near! They might only take 1/2 an hour to cook, but they're still complex, to me, and the end results look so very unappealing. I don't know what led me to believe that even a cheeseburger made by Gordon Ramsay would be good--it looks too froo-froo for me, no way I'd touch that! The pictures were pretty, but that's about all I can say in favor of this one. With unlimited access to recipes, why does anyone need another cookbook? Because not all recipes are born equal. Not all of them have been created by a global superstar chef who has built his reputation on delivering the very best food -- whether that's the ultimate fine dining experience at his 3 Michelin-star Restaurant, Gordon Ramsay, or the perfectly crafted burger from his Las Vegas burger joint. I am splitting my first entry into 2 posts. In this post, I am going to vaguely introduce myself, explain my personal challenge (TLDR, it’s to attempt to re-create all 100 recipes), and also make some notes about ingredients and conversions that apply to all of these recipes. I tried as hard as I could to follow the “Ultimate Cookery Course” video guide, along with following the companion app ingredients and proportions. If I could not find a specific ingredient, I did research to try to find an appropriate substitute. I also am converting quantities from metric to imperial via Google. Some ingredients I found are named differently in the USA than they are in Europe. Here are some common recurring “renames” and/or “substitutions” I used across all recipes: Low-and-behold, when circumstances FORCED me to cook regularly, I found I enjoyed it. I started out easy, with home meal kits (SunBasket). Then, I found I didn’t really care for many of the sauces that came with the kits, and started learning how to make my own sauces. Then, I tried my hand at cooking some simple recipes I could find on youtube. I made many “easy” recipes off of the Basics with Babish series (Weeknight Meals, One Pot Pastas, Salad, Pan Sauces, etc). Then, I moved on to some harder recipes. I was intrigued learning about what made food taste good. I started to dream that maybe I could actually become experienced and talented enough to be considered a “great home cook”. I sadly found the photography to be less polished (and artistic) than I have grown accustomed to, but the recipes themselves more than make up for that (and at least the recipes each get a picture so you still get a good sense of the dish)!

ROASTED ROOT VEGETABLES WITH CRUSHED PEPITAS

If you haven’t added truffle to your mac and cheese before, then you’re missing out. It’s as simple as that! The heady truffle really elevates the earthy flavour of this mac and cheese dish, making it the perfect accompaniment to a roast, meat dish, or simply as a main dish itself. Try mixing this recipe up by adding other ingredients you might already have in your fridge – diced bacon for saltiness, tangy spring onions, or a fresh hit of herbs would work a treat. In the same pan, melt the butter and sauté the onion and mushrooms until they are soft and the liquid has evaporated, about 5-7 minutes.

Add the Guinness, beef broth, thyme, rosemary, and bay leaf to the pot and bring the mixture to a boil.I loved watching Gordon Ramsay on TV during the first four or five seasons of Hell's Kitchen! My husband and I always thought it would be so cool to be dining in one of his restaurants (never happen) and have it happen to be on a night when they're filming a competition. But I've never gotten my hands on any of his cookbooks and really looked at his recipes. I always figured they'd be too fancy and complicated. Roll out the puff pastry on a lightly floured surface and place the beef in the center of the pastry.
