It’s a dish you can find in many trattorias and homes there, particularly in and around the town of Elice in the province of Pescara. This pasta recipe is rich in veggies and perfect for vegetarians. Of course, you can use other types of pasta with the alla Pecorara sauce. A unique pasta dish from Abruzzo. Homemade anellini pasta alla pecorara is another of these recipes. Of course. this doesn’t mean you can’t serve the pasta with other sauces. It just means it’s not traditional to do so. Anelli pasta, also known as anellini or pasta hoops, is a small, ring-shaped pasta that is often used in soups and salads. It is a popular choice in Italian cuisine and is often served with tomato sauce or ragu. In Sicily, anellini pasta is sometimes baked with meat or tomato sauce, a dish known as anellini al forno. The tomato sauce in this recipe has a base or soffrito of finely diced and sautéed onion, carrots and celery. Soffritto is the Italian mirepoix and is used in many sauce, soup and stewed meat recipes. Before it’s cooked Italians refer to it as ‘battuto’. When the sauce is ready stir in the ricotta.

I like the flavor of Italian sausage so I used that but other versions use ground meats. Also in my house I always have homemade marinara stashed in my freezer seasoned with garlic and basil, so that’s what I used here, s you can make homemade yourself or to make things easier and go a little faster you can use a good quality store bought one, I repeat… Good Quality! ( I won’t tell). Gather all your ingredients before you, the pasta, the cooked sausage, frozen peas, grated cheese, basil leaves and marinara. But this isn’t another column about baked pasta. You can use eggs or cheese to bind it (in my case I used cheese because I love cheese). Some put breadcrumbs and cheese on the outside (which is something I'm more likely to do next time over a dough). I can only imagine the crunchy delicious crust on the outside.With dried pasta rings, anellini or anelletti are generally smaller than anelli. But, homemade anellini pasta rings from Abruzzo are bigger. I guess it’s difficult to make very tiny ones by hand! How to make homemade anellini pasta rings. Anelletti is a pasta type that is ring shaped and in this case is baked, ( al Forno) between layers of marinara and bechamel sauce, of course there’s cheese and other goodies included like Italian sausage and peas. In the city of Palermo, you can also find anelletti al forno in all the classic rosticcerie (Italian specialty stores with pre-cooked dishes), where it’s usually served on small square trays like street food Anelletti al Forno by Salvatore Fraterrigo
