Aged nine years, Knob Creek is the oldest by a couple years. The extra aging draws more flavor and sugar from the wood, providing a full-bodied, fruity flavor with hints of grass and grain.Nose: Rich caramel, bright ginger and lingering menthol hints, with more herbaceous touches developing with the robust rye notes. A good core of oak spice, too. I’ve been an on-and-off friend of Knob Creek, and a mostly fair weather friend to Beam products in general. I’ve always liked Knob Creek’s age-stated 9 year-old although judging by what I wrote seven years ago in that link, the quality has dropped a bit (or I’ve gotten jaded, which is possible). I really liked Old Tub from Beam, which is still the deal of the century if you can find some. Still, most Beam bourbons give me a distinct off-note that’s somewhere in between engine grease and bitter vegetation, like chewing on grass. Operating under parent company Beam Suntory, Knob Creek’s three “siblings” are also brewed at the Jim Beam distillery: Booker’s, Baker’s, and Basil Hayden’s. All four are billed as small-batch bourbons for the high-end market. It’s bourbon, yes, but it’s not just bourbon. The Private Select has a strong finish, tasting of cinnamon and then moving into a spicy aftertaste. You’ll notice lingering notes of vanilla, oak, and caramel, which gives this bourbon a traditional taste. If you’re interested in trying one of their offerings, we recommend starting with their Cask Strength bourbon. While it’s easy to dismiss Makers Mark for many bourbon aficionados, it’s still quality and smooth-tasting bourbon.

Buffalo Trace Bourbon is a deep amber whiskey with an aroma of vanilla, mint and molasses. It is sweet with notes of brown sugar and spice. This whiskey finishes long and smooth with serious depth. The vast majority of bourbons begin with sour mash. This is based on taking from the prior batch, setting it out to that it sours throughout the night, then adding it into the newest batch. Going through this process is a lot like beginning a batch of sourdough.
