Flour– I usually have on hand both a good unbleached bread flour and all-purpose flour for making pasta at home. Semolina flour is also an important staple in my house. Tomato Paste– Buy in small cans or tubes. The tubes are great because you can squeeze out a little, and then reseal the tube and refrigerate it. The new book, which comes out on Thursday 1st September, sees Theo select ten staple Italian ingredients and create simple recipes to inspire people to cook with them. He told Tom Allen, who is in for Chris, that the idea of the book is, “ten ingredients in your pantry and the inspiration of those ten ingredients to cook from.”

Garlic– Buy firm, fat, fresh heads of garlic and store them in a cool dry place. If you keep them in the refrigerator use a paper bag. My local grocery sells Pomi, Muir Glen and Cento brands which are all very good. I prefer the chopped variety for the texture it adds, although I do keep a few boxes of the strained variety for my favorite pasta sauce with meatballs.

Depending on its age it can be extremely expensive, so I use an inexpensive one for salads, and save my twenty-five year old one to splash on special dishes. Olive Oil– If you splurge on any one item, I would suggest you buy the best extra virgin olive oil you can find. When Tom asked if you can roll it by hand or if you need a pasta-making machine, the chef told him: “You can roll it out by hand. It’s a good workout! You need a good surface, like a wooden surface, and a rolling pin. If you’ve got a pasta machine, that’s even better.” If you’re daunted about making Italian food, then you needn’t be. Theo said: “The thing about the cookbook, and the food I cook, it is quite simple. It’s not over-complicated. Italian food, there’s nowhere to hide. The powder imparts the most flavor, but you can use the strands as well. Finely chop the strands before use. A little goes along way. Dried Pasta– I use good Italian brands like De Cecco or Barilla. Once in a while I’ll splurge, and buy a good quality imported artisan pasta also. Generally, any imported pasta products made from semolina flour are good choices. There are now some very good whole grain pasta varieties available at most grocery stores.
